Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 6 slices cooked bacon, crumbled
  • 23 medium jalapeños, seeded and finely diced
  • 2 tablespoons ranch seasoning mix
  • 1/2 teaspoon garlic powder
  • 2 green onions, finely sliced
  • Salt & black pepper, to taste
  • 1/2 cup all-purpose flour (for dredging)
  • 2 eggs, beaten (for breading)
  • 1 cup panko breadcrumbs (for breading)
  • 1/2 teaspoon smoked paprika or cayenne (optional, for breading)
  • Oil spray (such as avocado oil, for air fryer basket)

Instructions

  1. In a medium bowl, combine softened cream cheese, shredded cheddar, crumbled bacon, diced jalapeños, ranch seasoning, garlic powder, and green onions. Mix with a hand mixer or sturdy spoon until fluffy and well combined. Season with salt and pepper to taste.
  2. Using a cookie scoop or tablespoon, portion and roll the mixture into 18-20 balls (about 1-1.5 inches wide). If the mixture is too sticky, chill for 10 minutes before rolling.
  3. Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with paprika or cayenne if using.
  4. Roll each cheese ball in flour, dip in beaten eggs, and coat thoroughly with panko breadcrumbs. For extra crunch, double dip in egg and panko.
  5. Preheat the air fryer to 375°F (190°C) for 2-3 minutes. Lightly spray the basket with oil.
  6. Arrange cheese balls in a single layer in the air fryer basket, leaving space between each. Cook in batches if needed.
  7. Air fry at 375°F (190°C) for 8-10 minutes, shaking or turning halfway through, until golden brown and crispy.
  8. Let cheese balls cool for 2-3 minutes before serving. Garnish with extra green onions or ranch seasoning if desired.

Notes

For best results, chill the cheese mixture before rolling if it’s too soft. Double breading gives extra crunch. Don’t overcrowd the air fryer basket for even crisping. Use gluten-free flour and breadcrumbs for a gluten-free version, or dairy-free cheese for a dairy-free option. Leftovers can be refrigerated for up to 3 days or frozen after breading and air fried from frozen.
