  • 1 cup (225 g) unsalted butter, softened
  • 3/4 cup (150 g) brown sugar
  • 1/4 cup (50 g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 1/2 cups (315 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • Soft caramel candies
  • Sea salt for sprinkling

Instructions

  1. Pour 1 cup (240 ml) of apple cider into a medium saucepan and simmer over medium heat until reduced to 1/4 cup (60 ml). Let it cool completely.
  2. In a large mixing bowl, cream together 1 cup (225 g) softened butter, 3/4 cup (150 g) brown sugar, and 1/4 cup (50 g) granulated sugar until light and fluffy (about 2 minutes).
  3. Beat in 2 large eggs, one at a time, followed by 1 teaspoon vanilla extract and the cooled apple cider reduction.
  4. In a separate bowl, whisk together 2 1/2 cups (315 g) all-purpose flour, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, and 1/4 teaspoon nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Chill the dough in the refrigerator for 30 minutes.
  6. Unwrap soft caramel candies and cut them in half if they’re large.
  7. Scoop dough into 1 1/2-inch balls, flatten slightly, and press a caramel piece into the center. Roll the dough over the caramel to seal it inside.
  8. Arrange cookies on parchment-lined baking sheets and bake at 350°F (175°C) for 10-12 minutes, or until edges are golden.
  9. Sprinkle cookies with sea salt as soon as they come out of the oven, and let them cool on a rack.
