Instructions

  1. Reduce the Apple Cider: In a small saucepan, simmer the apple cider over medium heat until it reduces down to 1/4 cup. This takes about 10-15 minutes. Set aside to cool.
  2. Prepare the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
  4. Add the Wet Ingredients: Mix in the egg and reduced apple cider, followed by the buttermilk. Beat until smooth.
  5. Combine: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Don’t overmix!
