These apple cinnamon muffins are moist, fluffy, and packed with the warm flavors of fall. Perfect for breakfast, a snack, or dessert, they’re easy to make and a crowd-pleaser.

  • 2 medium-sized apples, peeled and grated
  • 2 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs, at room temperature
  • 1/3 cup vegetable oil
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line your muffin tin with paper liners or lightly grease the cups.
  2. Peel and grate the apples. Set them aside and allow any excess liquid to drain.
  3. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  4. In a medium bowl, whisk the eggs, oil, milk, and vanilla extract until well blended.
  5. Add the grated apples to the wet ingredients and stir gently.
  6. Pour the wet ingredients into the dry and mix just until combined. Be careful not to overmix.
  7. Divide the batter evenly among the muffin tin cups, filling each about 3/4 full.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For added flavor, sprinkle cinnamon sugar or chopped nuts on top before baking. Ensure you don’t overmix the batter to keep the muffins light and fluffy.
