  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup apples, peeled and diced (preferably Granny Smith)
  • 1/4 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cream of tartar, ground cinnamon, and salt. Set aside.
  3. In a large bowl, cream the butter, granulated sugar, and brown sugar using an electric mixer until light and fluffy (about 2-3 minutes).
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Slowly mix the dry ingredients into the wet ingredients until just combined. Avoid overmixing.
  6. Fold in the diced apples using a spatula, ensuring they are evenly distributed throughout the dough.
  7. In a small bowl, combine 1/4 cup of granulated sugar with 1 tablespoon of ground cinnamon. Roll each dough ball (about 1.5 tablespoons) in the cinnamon-sugar mixture.
  8. Place the coated dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are lightly golden but the centers are still soft. Don’t overbake.
  10. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a cooling rack.
