This apple fritter bread transforms a classic fall treat into an easy homemade bread bursting with cinnamon-spiced apples and a tender crumb. Perfect for breakfast, dessert, or afternoon tea.

  • 2 medium-sized apples, peeled and diced (Granny Smith and Honeycrisp recommended)
  • 2 tablespoons granulated sugar (for apple mixture)
  • 2 tablespoons brown sugar (for apple mixture)
  • 1 teaspoon ground cinnamon (for apple mixture)
  • 2 cups (240g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, at room temperature
  • 1/2 cup (120ml) milk
  • 1 teaspoon vanilla extract
  • 1/2 cup (60g) powdered sugar (for glaze)
  • 12 tablespoons milk (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan with butter or non-stick spray.
  2. In a bowl, toss the diced apples with 2 tablespoons of granulated sugar, 2 tablespoons of brown sugar, and 1 teaspoon of cinnamon. Set aside.
  3. In a separate bowl, whisk together 2 cups of all-purpose flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt.
  4. In a large bowl, cream 1/2 cup of softened butter with 3/4 cup of granulated sugar until light and fluffy. Beat in the eggs one at a time, followed by 1/2 cup of milk and 1 teaspoon of vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
  6. Pour half the batter into the prepared loaf pan. Add half the apple mixture on top, then repeat with the remaining batter and apples.
  7. Use a knife to gently swirl the apple mixture into the batter for a marbled effect.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack.
  10. Mix 1/2 cup of powdered sugar with 1-2 tablespoons of milk and drizzle over the cooled bread.
