  • ½ cup (120ml) vegetable oil or melted butter
  • 2 large eggs, room temperature
  • ¾ cup (180g) pumpkin puree (not pumpkin pie filling!)
  • 1 cup (120g) diced apples (a firm variety like Granny Smith or Honeycrisp works best)
  • ½ cup (70g) all-purpose flour (for streusel)
  • ¼ cup (55g) brown sugar
  • ½ tsp cinnamon (for streusel)
  • ¼ cup (60g) cold unsalted butter, cubed

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In a separate bowl, whisk the sugar, oil, and eggs until smooth. Add the pumpkin puree and mix until fully incorporated.
  4. Gradually add the dry ingredients to the wet mixture, folding gently with a spatula. Do not overmix! Stir in the diced apples just until evenly distributed.
  5. In a smaller bowl, combine the flour, brown sugar, and cinnamon for the streusel. Use a pastry cutter or fork to cut in the cold butter until the mixture resembles coarse crumbs.
  6. Use a spoon or ice cream scoop to evenly divide the batter among the muffin cups, filling each about ¾ full. Sprinkle a generous amount of streusel topping over each muffin.
  7. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack.
