  • 6 cups (1.4 liters) chicken broth or vegetable broth (low-sodium preferred)
  • 1-inch piece fresh ginger, peeled and sliced thin
  • 3 garlic cloves, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • Chili oil or chili flakes (optional, to taste)
  • 1216 pork, chicken, or veggie potstickers/dumplings (about 1 lb / 450 g), frozen or homemade
  • 1 cup carrots, julienned or sliced
  • 2 cups baby bok choy or napa cabbage, chopped
  • 1 cup mushrooms, sliced (shiitake, cremini, or button)
  • 3 green onions, sliced
  • 2 tablespoons fresh cilantro or parsley, chopped (optional)
  • Sriracha or chili-garlic sauce (optional, for serving)
  • Sesame seeds (optional, for serving)
  • Lime wedges (optional, for serving)

Instructions

  1. Peel and thinly slice the ginger. Mince the garlic. Julienne or slice the carrots, chop the bok choy or napa cabbage, slice the mushrooms, and slice the green onions.
  2. Place a large soup pot over medium heat. Add sesame oil, then sauté the garlic and ginger for about 1 minute until fragrant.
  3. Pour in the chicken or vegetable broth. Stir in soy sauce and rice vinegar. Add chili oil or flakes if desired. Bring to a gentle simmer.
  4. Add carrots and mushrooms to the simmering broth. Cook for 2–3 minutes until they start to soften.
  5. Gently add the frozen or fresh potstickers to the pot. Simmer (do not boil) for 5–7 minutes, or until dumplings are cooked through and float to the surface.
  6. Stir in the bok choy or napa cabbage. Simmer for 1–2 minutes until just wilted. Taste and adjust seasoning as needed.
  7. Add green onions and cilantro (if using) right at the end for freshness.
  8. Ladle soup into bowls. Top with extra green onions, sesame seeds, sriracha, or a squeeze of lime as desired. Serve hot.

Notes

For vegetarian or vegan, use vegetable broth and plant-based dumplings. For gluten-free, use tamari and gluten-free dumplings. Add greens at the end to keep them vibrant. Store leftovers with dumplings and broth separate for best texture. Soup is highly customizable—swap veggies or dumpling types as desired.
