Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 1/3 cup (65g) granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (optional)
  • 2/3 cup (160ml) buttermilk
  • 2 large eggs, room temperature
  • 1/4 cup (60ml) unsalted butter, melted
  • 1 1/2 cups (about 2 medium apples) diced apples (use tart varieties like Granny Smith)
  • 1 cup (120g) powdered sugar
  • 23 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, combine the buttermilk, eggs, and melted butter. Stir until smooth.
  4. Gradually pour the wet ingredients into the dry ingredients, mixing until just combined. Avoid overmixing.
  5. Fold in the diced apples gently with a spatula, ensuring they’re evenly distributed throughout the batter.
  6. Using an ice cream scoop or spoon, drop small mounds of batter onto your prepared baking sheet, leaving space between each fritter.
  7. Bake for 12-15 minutes or until the fritters are golden brown and a toothpick inserted into the center comes out clean.
  8. While the fritters cool slightly, prepare the glaze. In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
  9. Drizzle the glaze generously over the warm fritters or dip each one for a thicker coating. Let the glaze set for a few minutes before serving.

Notes

Keep apples chilled to prevent the batter from becoming watery. Avoid overbaking to maintain a soft texture. Let fritters cool before glazing to ensure a glossy finish.
