  • 1 cup mashed roasted butternut squash (about ½ medium squash)
  • 1 cup all-purpose flour (plus extra for dusting)
  • 1 large egg, beaten
  • ½ teaspoon salt
  • ¼ teaspoon ground nutmeg (optional, for added warmth)
  • 8 ounces Italian sausage, casings removed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ½ cup heavy cream
  • ¼ cup grated parmesan cheese
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional garnish)
  • Extra parmesan for sprinkling (optional garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Slice the squash in half, remove seeds, and place cut-side down on a baking sheet. Roast for about 40 minutes or until tender. Allow to cool, then scoop out the flesh and mash until smooth.
  2. In a mixing bowl, combine 1 cup of mashed butternut squash, 1 cup of flour, 1 beaten egg, salt, and nutmeg. Mix until a soft dough forms. Add more flour if the dough is too sticky.
  3. Lightly flour your countertop and roll the dough into long ropes, about ¾ inch thick. Cut into small 1-inch pieces and roll each piece over a fork to create ridges. Set aside.
  4. Heat olive oil in a large skillet over medium heat. Add the sausage and break it up into crumbles as it cooks. Once browned, remove from skillet and set aside.
  5. In the same skillet, sauté garlic until fragrant. Pour in the heavy cream, parmesan cheese, and thyme. Stir until smooth and creamy. Season with salt and pepper.
  6. Bring a large pot of salted water to a boil. Add gnocchi in batches, cooking until they float to the surface (about 2-3 minutes). Remove with a slotted spoon.
  7. Add the cooked gnocchi and sausage to the skillet with the sauce. Toss gently to coat evenly.
