  • 1 1/4 cups all-purpose flour

  • 1/4 teaspoon baking soda
  • Pinch of salt
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips
  • 2 tablespoons heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, mixing until combined. Gradually add the flour, baking powder, baking soda, and salt. Mix just until the dough comes together.
  3. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
  4. Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool completely on a cooling rack.
  5. In a medium bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Refrigerate until ready to use.
  6. Heat the chocolate chips and heavy cream in a small saucepan over low heat, stirring constantly until smooth. Remove from heat and let cool slightly.
  7. Spread a generous dollop of filling on the flat side of one cookie, then sandwich with another cookie. Repeat for all cookies.
  8. Using a spoon or spatula, spread ganache on the top of each cookie sandwich. Let set for a few minutes before serving.

Notes

For a dairy-free option, use coconut cream in the filling and ganache. Chill the filling for easier spreading and let cookies cool completely before assembling.
