  • Juice of 1 lime
  • 1 teaspoon honey or maple syrup
  • 4 cups mixed salad greens or baby spinach
  • 1 cup shredded carrots
  • 2 celery stalks, thinly sliced
  • 1 cucumber, diced
  • Optional: 1 cup cooked quinoa or black beans
  • Chopped cilantro or parsley, to taste
  • Optional extras: crumbled blue cheese or feta, sliced avocado, toasted pepitas or walnuts
  • Pinch of salt
  • Flaky sea salt, for finishing

Instructions

  1. Fill a medium saucepan with enough water to cover eggs by about an inch and bring to a gentle boil over medium-high heat.
  2. Using a slotted spoon, carefully lower 4 large room temperature eggs into the water. Set a timer for 6 minutes for runny yolks or 7 minutes for slightly firmer yolks.
  3. Prepare a bowl with ice water. When timer goes off, immediately transfer eggs to ice bath to stop cooking. Let chill for 3-5 minutes, then peel carefully under running water.
  4. In a small bowl, whisk together 1 cup Greek yogurt, 1 teaspoon chipotle powder or minced chipotle pepper, juice of 1 lime, and 1 teaspoon honey or maple syrup. Adjust seasoning to taste.
  5. Wash and dry salad greens. Shred carrots, slice celery, and dice cucumber. Toss veggies together in a large bowl with a pinch of salt and a squeeze of lime juice.
  6. If using, add cooked quinoa or black beans to the veggie mix and toss to combine.
  7. Divide greens and veggies into four serving bowls. Arrange peeled soft-boiled eggs on top, halved or whole as preferred.
  8. Drizzle generously with chipotle-lime yogurt sauce. Sprinkle with chopped cilantro or parsley, crumbled cheese (if using), sliced avocado, and toasted pepitas or walnuts.
  9. Finish with a squeeze of fresh lime juice and a pinch of flaky sea salt. Serve immediately.

Notes

Use room temperature eggs and a gentle boil to avoid cracking and achieve perfect soft-boiled eggs. Peel eggs under running water for easier shell removal. The chipotle-lime yogurt sauce can be made a day ahead and refrigerated. Adjust chipotle and buffalo sauce amounts to control spice level.
