  • 1/4 cup panko breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/4 cup finely chopped fresh parsley
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup hot sauce (e.g., Frank’s RedHot)
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon honey
  • 1 cup plain Greek yogurt (full fat or 2%)
  • 1 chipotle pepper in adobo, finely chopped
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon lime zest
  • Salt to taste
  • 4 cups cooked brown rice or cauliflower rice
  • 1 cup shredded carrots
  • 1 cup chopped celery
  • 1 cup cherry tomatoes, halved
  • 1/4 cup crumbled blue cheese or feta (optional)
  • Fresh cilantro or parsley leaves for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground turkey, panko breadcrumbs, egg, minced garlic, parsley, smoked paprika, salt, and pepper. Mix gently without overworking.
  3. Form mixture into approximately 20 meatballs, about 1 inch in diameter, and place evenly spaced on the baking sheet.
  4. Bake meatballs for 18-20 minutes, flipping halfway through, until browned and cooked through (internal temp 165°F/74°C). Optionally broil for 2 minutes for more caramelization.
  5. While meatballs bake, whisk together hot sauce, melted butter, and honey in a small bowl to make buffalo sauce.
  6. Mix Greek yogurt, chopped chipotle pepper, lime juice, lime zest, and salt in a bowl. Chill in fridge for at least 10 minutes.
  7. Cook rice or cauliflower rice according to package instructions and fluff with a fork.
  8. Toss baked meatballs in buffalo sauce until evenly coated.
  9. Assemble bowls by layering rice, shredded carrots, celery, cherry tomatoes, buffalo meatballs, drizzle with chipotle-lime yogurt, and sprinkle with blue cheese and fresh herbs.
  10. Serve immediately warm.

Notes

If buffalo sauce is too spicy, add extra melted butter or honey to mellow heat. Keep hands lightly oiled when mixing meatballs to prevent sticking. For gluten-free, use gluten-free breadcrumbs or almond flour. Can pan-fry or air-fry meatballs as alternatives. Store leftovers in airtight container up to 3 days; freeze components separately.
