  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup caramel bits
  • 1/2 cup fresh apple, diced (Granny Smith or Honeycrisp)
  • Optional: 1/4 cup chopped pecans or walnuts

Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes).
  3. Mix in the egg and vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour, oats, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Gently stir in the diced apples and caramel bits using a spatula.
  7. Use a cookie scoop or tablespoon to drop cookie dough onto the prepared baking sheets, about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden brown but the centers are still soft.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

Coat caramel bits lightly in flour to prevent sticking. Chop apples finely for even distribution and avoid soggy spots.
