Ingredients

  • Large Tennessee onions (or Vidalia onions)
  • Unsalted butter
  • Shredded cheddar or Gruyère cheese
  • Breadcrumbs (optional)
  • Chicken broth
  • Salt
  • Pepper
  • Fresh parsley or chives (optional garnishes)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel the Tennessee onions and slice them into thick rounds, about 1/2 inch each. Place them in your baking dish, laying them flat in a single layer.
  3. Dot the onions with small pieces of butter, ensuring each slice gets a bit of buttery goodness.
  4. Season the onions generously with salt and freshly cracked black pepper.
  5. Pour the chicken broth into the baking dish, around the onions, just enough to create steam while baking.
  6. Cover the dish tightly with aluminum foil and bake for 25 minutes, until the onions are tender and starting to release their natural sweetness.
  7. Remove the foil and sprinkle the shredded cheese evenly over the onions. If using breadcrumbs, sprinkle them on top of the cheese.
  8. Return the dish to the oven and bake uncovered for another 15-20 minutes, or until the cheese is melted and bubbly, and the breadcrumbs are golden brown.
  9. Carefully remove from the oven and let the dish cool for a few minutes before serving. Garnish with fresh parsley or chives.

Notes

For extra flavor, add garlic powder or smoked paprika to the onions. Use freshly grated cheese for a creamier finish. Broil for 1-2 minutes at the end for a golden, bubbly topping.
