Cheesy Meatball Subs Recipe Easy and Perfect for Dinner

Comfort food at its finest, these cheesy meatball subs feature gooey melted cheese, savory meatballs, and rich marinara sauce on toasted hoagie rolls. Perfect for weeknight dinners or casual gatherings.

  • 1 lb ground beef (or a mix of beef and pork)
  • 1/2 cup Italian-style breadcrumbs
  • 1/4 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 2 cups marinara sauce
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 4 hoagie rolls
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, milk, Parmesan cheese, egg, garlic, oregano, salt, pepper, and red pepper flakes. Mix gently until just combined.
  3. Roll the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
  4. Bake for 15-18 minutes, or until the meatballs are cooked through and lightly browned.
  5. While the meatballs are baking, heat marinara sauce in a large skillet over medium heat.
  6. Stir in dried basil and oregano.
  7. Transfer cooked meatballs to the skillet and gently toss to coat them in the sauce. Let them simmer on low heat for 5 minutes.
  8. Preheat your broiler on high.
  9. Slice hoagie rolls lengthwise but not all the way through, creating a pocket for the meatballs.
  10. Spoon 4-5 meatballs into each roll, along with some marinara sauce.
  11. Top with shredded mozzarella and a sprinkle of Parmesan cheese.
  12. Place assembled subs on a broiler-safe tray and broil for 2-3 minutes, or until the cheese is melted and bubbly.
  13. Remove from the oven and sprinkle with fresh parsley or basil, if desired.
