  • 1012 Peeps marshmallow candies, roughly chopped
  • 1 1/2 cups (90g) mini marshmallows
  • Optional: handful of chopped nuts (walnuts or pecans)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan lightly with butter or line it with parchment paper.
  2. Melt the butter in a microwave-safe bowl or on the stove over low heat until just liquid (about 1-2 minutes). Let it cool slightly.
  3. Mix sugar and melted butter in a large bowl using a whisk or electric mixer for 1-2 minutes until glossy and combined.
  4. Add eggs one at a time with vanilla extract, whisking well after each addition until the batter is shiny and slightly thickened.
  5. Sift together flour, cocoa powder, and salt in a separate bowl.
  6. Fold dry ingredients into wet ingredients gently with a rubber spatula until no dry streaks remain.
  7. Chop the Peeps candies roughly into 1/2-inch pieces and fold them into the batter carefully.
  8. Pour the batter into the prepared pan and smooth the top with a spatula.
  9. Bake for 25-30 minutes, checking at 25 minutes with a toothpick inserted near the center; it should come out with a few moist crumbs but not wet batter.
