  • 3 cups cooked chicken, diced or shredded (about 400g or 1 lb)
  • 1 bag frozen tater tots (about 32 oz or 900g)
  • 2 cups Alfredo sauce (jarred or homemade, about 480ml)
  • 2 cups shredded mozzarella cheese (about 200g), divided
  • 1/2 cup shredded Parmesan cheese (about 50g)
  • 1 cup frozen peas (optional, about 130g)
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (or to taste)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. If using rotisserie or leftover chicken, dice or shred it into bite-sized pieces. Thaw and pat dry any frozen veggies if using.
  3. In a large mixing bowl, combine cooked chicken, 1 cup mozzarella, all the Parmesan, thawed veggies (if using), garlic powder, Italian seasoning, black pepper, and salt. Pour in Alfredo sauce and stir until well coated.
  4. Spread the chicken mixture evenly in a greased 9×13-inch baking dish. Smooth the top with a spatula.
  5. Arrange the frozen tater tots in a single layer over the chicken mixture.
  6. Sprinkle the remaining 1 cup mozzarella over the tater tots. Add extra Parmesan if desired.
  7. Bake uncovered for 35-40 minutes, or until the tater tots are golden brown and the cheese is bubbly. Tent with foil if browning too quickly.
  8. For extra crispy tots, broil for 2-3 minutes at the end, watching closely.
  9. Let the casserole rest for 5-10 minutes before serving. Garnish with chopped parsley if desired.

For gluten-free, use gluten-free tater tots and Alfredo sauce. Add extra veggies like broccoli or spinach for a nutrition boost.
