These Cinnamon Roll French Toast Bites combine the nostalgic flavor of cinnamon rolls with the crisp, golden goodness of French toast, making them the ultimate breakfast treat.

Ingredients

Scale
  • Thick slices of brioche or challah (day-old works best for texture)
  • 4 large eggs
  • 1 cup (240 ml) milk or half-and-half
  • 1 teaspoon vanilla extract
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons butter
  • Powdered sugar (optional for dusting)
  • 2 ounces (55 g) softened cream cheese
  • 1/2 cup (60 g) powdered sugar
  • 2 tablespoons milk

Instructions

  1. In a large mixing bowl, whisk together eggs, milk, vanilla extract, brown sugar, and ground cinnamon until smooth.
  2. Slice brioche or challah into 1-inch cubes. Day-old bread works best as it holds up to the custard without getting soggy.
  3. Working in batches, dunk the bread cubes into the custard mixture, making sure each piece is coated but not overly saturated.
  4. Heat butter in a nonstick skillet over medium heat. Add the coated bread cubes and cook for 2-3 minutes per side, or until golden brown and crisp.
  5. In a small bowl, mix softened cream cheese, powdered sugar, and milk until smooth. Adjust consistency as needed.
  6. Arrange the French toast bites on a serving platter and drizzle generously with cream cheese icing. Dust with powdered sugar if desired.

Notes

Use day-old bread for better texture, avoid overcrowding the skillet, and customize the icing with cinnamon or maple syrup for extra flavor.
