  • 1 cup long-grain white rice, uncooked
  • 2 cups shredded sharp cheddar cheese
  • 1 ½ cups whole milk
  • 1 cup chicken broth (preferably low sodium)
  • 2 tablespoons unsalted butter, melted
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • ½ cup sour cream
  • Salt and pepper to taste
  • 1 teaspoon dried thyme or Italian seasoning (optional)
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your 9×13-inch baking dish with butter or cooking spray.
  2. Cook the rice: In a medium saucepan, combine 1 cup uncooked rice with 2 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until tender. Remove from heat and fluff with a fork.
  3. Sauté the aromatics: Melt 2 tablespoons butter in a large skillet over medium heat. Add chopped onion and sauté until translucent, about 4-5 minutes. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Make the cheese sauce: Sprinkle 2 tablespoons flour over the onion and garlic mixture, stirring constantly for 1-2 minutes. Gradually whisk in 1 ½ cups milk and 1 cup chicken broth, stirring until the sauce thickens and bubbles gently, about 5 minutes. Remove from heat and stir in 1 ½ cups shredded cheddar cheese until melted and smooth. Season with salt, pepper, and dried herbs if using.
  5. Combine the casserole: In a large bowl, mix cooked rice, shredded chicken, sour cream, and the cheese sauce. Stir well to coat everything evenly.
  6. Transfer to baking dish: Pour the mixture into your prepared baking dish and spread evenly. Sprinkle the remaining ½ cup cheddar cheese over the top.
  7. Bake: Place the casserole in the preheated oven and bake uncovered for 25-30 minutes, or until the top is golden and bubbly. Tent with foil if cheese browns too quickly.
  8. Rest and garnish: Let the casserole sit for 5 minutes before serving. Sprinkle fresh parsley on top.

Use day-old rice to prevent mushiness. Keep an eye on moisture levels and add extra broth if needed. Tent with foil if cheese browns too quickly. Can substitute brown rice but adjust cooking time. For dairy-free, use coconut milk and vegan cheese. For low-carb, substitute cauliflower rice and use mozzarella and cream cheese.
