  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
  • 1 can (15 oz) black beans, drained and rinsed (optional)
  • 1 packet taco seasoning (or homemade blend: chili powder, cumin, paprika, onion powder, garlic powder, salt)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sour cream
  • 1 large bag (9.75 oz) Nacho Cheese Doritos

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef with the chopped onion until the meat is no longer pink and the onions are translucent, about 7-10 minutes. Drain excess fat if needed.
  3. Stir in minced garlic and taco seasoning. Cook for 1-2 minutes until fragrant. Mix in diced tomatoes with green chilies and black beans (if using). Let simmer for about 5 minutes.
  4. In a separate bowl, combine shredded cheddar, Monterey Jack cheese, and sour cream.
  5. Crush about half the bag of Doritos lightly into bite-sized pieces. Spread a layer of crushed Doritos evenly on the bottom of a 9×13 inch casserole dish.
  6. Spoon half of the beef mixture over the chips. Spread half of the cheese and sour cream mixture on top of the beef.
  7. Repeat layering with remaining Doritos, beef mixture, and cheese mixture. Sprinkle remaining crushed Doritos over the top.
  8. Bake uncovered for 20-25 minutes until cheese is bubbly and golden and Doritos on top are crispy and slightly toasted.
  9. Let the casserole rest for 5 minutes before serving.

Notes

If the top browns too fast, tent loosely with foil halfway through baking. Do not over-crush the Doritos to maintain crunch. Drain excess fat from beef to avoid greasiness. Rest casserole 5 minutes before serving to help layers hold. For dairy-free, substitute sour cream with coconut yogurt and use dairy-free cheese. Confirm Doritos and seasoning are gluten-free if needed.
