  • 1/2 cup whole milk
  • 3 large eggs, room temperature
  • 1/3 cup brown sugar

  • 1 teaspoon vanilla extract
  • 4 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 23 tablespoons milk

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Remove cinnamon rolls from package and cut each into quarters. Place pieces evenly in the prepared baking dish.
  3. In a medium saucepan over medium heat, melt 6 tablespoons unsalted butter. Stir frequently until it foams and turns golden brown with nutty brown bits, about 4–5 minutes. Remove from heat immediately.
  4. In a mixing bowl, whisk together 3 large eggs, 1/2 cup whole milk, 1/3 cup brown sugar, 1 tablespoon ground cinnamon, 1 teaspoon vanilla extract, and the browned butter until smooth.
  5. Pour the custard mixture evenly over the cinnamon roll pieces in the baking dish. Press down gently with the back of a spoon to help soak up the custard.
  6. Bake in the preheated oven for 30–35 minutes until the top is golden brown and custard is set but moist. Tent with foil if browning too quickly.
  7. While baking, beat 4 ounces softened cream cheese with 1 cup powdered sugar and 2–3 tablespoons milk until smooth and creamy. Adjust milk for desired glaze consistency.
  8. Once casserole is out of the oven and slightly cooled (about 10 minutes), drizzle the cream cheese glaze generously over the top. Serve warm.

Notes

Use a light-colored pan to brown butter to watch color changes clearly. Press custard into cinnamon rolls to ensure a soft, custardy texture. If brown butter smells bitter, it is overcooked. You can prepare the glaze while casserole bakes. Baking times may vary; check at 25 minutes to avoid overbaking.
