Ingredients

Scale
  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (110g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 1/4 cups (155g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (175g) semi-sweet chocolate chips
  • Pinch of flaky sea salt for sprinkling on top (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, beat 1/2 cup softened unsalted butter with 1/2 cup granulated sugar and 1/2 cup packed light brown sugar until light and fluffy, about 2-3 minutes with an electric mixer or 5 minutes by hand.
  3. Add 1 large egg and 1 teaspoon vanilla extract to the butter and sugar mixture. Mix until combined and smooth.
  4. In a separate bowl, whisk together 1 1/4 cups all-purpose flour, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Avoid overmixing.
  6. Fold in 1 cup semi-sweet chocolate chips gently with a spatula.
  7. Press the cookie dough evenly into a greased 10-inch cast-iron skillet.
  8. Bake on the middle rack for 20-25 minutes until edges are golden and the center is slightly soft and jiggly.
  9. Immediately sprinkle a pinch of flaky sea salt on top after removing from the oven.
  10. Let cool for about 10 minutes to thicken but remain gooey. Serve warm, optionally with vanilla ice cream.

Notes

If edges brown too fast, tent loosely with foil halfway through baking to keep the center gooey. Use room-temperature butter and egg for best texture. Avoid overmixing flour to prevent toughness. Sprinkle flaky sea salt on top after baking for flavor contrast. Dough can be refrigerated up to 24 hours before baking; add a couple extra minutes to baking time if chilled.
