  • 6 large eggs (room temperature)
  • 2 cups (480 ml) whole milk or 2% milk (almond or oat milk for dairy-free option)
  • 2 teaspoons vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/4 cup (50 grams) granulated sugar
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter (for greasing the baking dish)
  • For the Vanilla Glaze:
  • 1 cup (120 grams) powdered sugar, sifted
  • 2 tablespoons (30 ml) whole milk or heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9×13-inch (23×33 cm) baking dish with 2 tablespoons of melted butter.
  3. Slice each of the 8 large cinnamon rolls into quarters (about 32 pieces).
  4. Spread the cut cinnamon roll pieces evenly in the prepared baking dish.
  5. In a large mixing bowl, whisk together 6 large eggs, 2 cups milk, 2 teaspoons vanilla extract, 1 tablespoon ground cinnamon, 1/4 cup granulated sugar, and 1/4 teaspoon salt until smooth.
  6. Slowly pour the egg mixture evenly over the cinnamon rolls, pressing down gently with a spatula to help the bread soak up the custard. Let it sit for 10 minutes to absorb fully.
  7. Bake in the preheated oven for 40-45 minutes until the top is golden brown and a knife inserted in the center comes out clean but moist.
  8. While baking, whisk together 1 cup powdered sugar, 2 tablespoons milk or heavy cream, 1 teaspoon vanilla extract, and a pinch of salt in a small bowl until smooth and pourable.
  9. Once baked, let the dish cool for 10 minutes to set.
  10. Drizzle the vanilla glaze generously over the top.
  11. Serve warm immediately.

Notes

Use room temperature eggs and milk for best custard consistency. Let the cinnamon rolls soak in the custard for at least 10 minutes to achieve a custardy texture. Tent with foil if browning too fast. Can be assembled the night before and baked from the fridge with extra baking time. Drizzle glaze while bake is warm but not hot for best texture.
