  • 8 oz breakfast sausage links or bulk sausage (preferably pork)
  • 4 large eggs, room temperature
  • 2 tbsp milk or cream (use dairy-free milk if needed)
  • 1 ripe avocado, sliced or diced
  • ½ cup shredded cheddar cheese
  • 4 large flour tortillas (10-inch), warmed
  • ¼ cup finely chopped onion (optional)
  • ¼ cup chopped bell pepper (optional)
  • Salt and pepper to taste
  • 1 tbsp olive oil or butter
  • Salsa or hot sauce to serve (optional)

Instructions

  1. Heat a skillet over medium heat. Add sausage links or bulk sausage, breaking bulk into small pieces. Cook for 8–10 minutes, stirring occasionally, until browned and crispy on edges but still juicy inside. Transfer to a paper towel-lined plate to drain excess grease.
  2. If using onion and bell pepper, add 1 tsp olive oil to the same skillet and sauté for 3–4 minutes until softened and slightly caramelized. Remove and set aside.
  3. In a bowl, whisk together eggs, milk or cream, salt, and pepper until combined. Heat 1 tbsp butter or olive oil in the skillet over low-medium heat. Pour in egg mixture and let sit undisturbed for 30 seconds. Gently stir and fold eggs with a spatula, forming soft curds. When eggs are halfway cooked and still slightly runny, sprinkle in shredded cheddar cheese and continue folding until eggs are fully cooked but moist (about 3–4 minutes total).
  4. Warm tortillas by wrapping in a damp paper towel and microwaving for 20–30 seconds or warming individually in a dry skillet over low heat for about 15 seconds per side until pliable.
  5. Lay a warm tortilla flat. Spoon scrambled eggs down the center, followed by crispy sausage, sautéed veggies (if using), and sliced avocado. Add salsa or hot sauce if desired.
  6. Fold sides in and roll tortilla tightly from one end to the other, sealing the filling inside. Repeat with remaining tortillas and filling.
  7. Optional: For extra crispiness, place burritos seam-side down in a hot skillet and cook 1–2 minutes per side until golden and crispy.

Notes

Do not overcook the eggs; keep them soft and creamy. Drain sausage well to avoid soggy burritos. Warm tortillas properly to prevent cracking. For a leaner option, use turkey sausage. Gluten-free tortillas and dairy-free cheese can be used for dietary needs. Add lemon juice to avocado slices if not ripe to keep fresh.
