  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon

  • 1 cup (240g) pumpkin puree
  • 1/2 cup (100g) brown sugar
  • 2 large eggs
  • 1/4 cup (60g) melted butter
  • 1/4 cup (60ml) milk
  • 1 teaspoon vanilla extract
  • 1/4 cup (60g) melted butter (for coating)
  • 1/2 cup (100g) granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your donut pan with butter or cooking spray.
  2. In a large bowl, whisk together flour, baking powder, salt, ground cinnamon, ground nutmeg, and ground ginger. Set aside.
  3. In a separate bowl, combine pumpkin puree, brown sugar, eggs, melted butter, milk, and vanilla extract. Mix until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Avoid overmixing.
  5. Spoon the batter into the donut pan, filling each cavity about 2/3 full. Use a piping bag for cleaner filling.
  6. Bake for 12-15 minutes, or until the donuts are firm to the touch and a toothpick inserted comes out clean.
  7. While the donuts cool slightly, melt butter in a small bowl. In another bowl, mix granulated sugar and ground cinnamon.
  8. Brush the donuts lightly with melted butter and dip them into the cinnamon sugar mixture, turning to coat evenly.
  9. Place the coated donuts on a cooling rack and let them cool completely—or enjoy them warm.
