  • 1 medium butternut squash, peeled, seeded, and cubed
  • 2 tablespoons olive oil
  • 1 pound Italian sausage (mild or spicy)
  • 12 ounces pasta (penne, rigatoni, or fusilli)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 2 tablespoons fresh sage, chopped
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the cubed butternut squash with olive oil, salt, and pepper. Spread evenly on the baking sheet and roast for 25-30 minutes, or until tender and lightly caramelized.
  3. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  4. In a large skillet, heat a drizzle of olive oil over medium heat. Add the sausage, breaking it into small pieces as it cooks. Sauté for 6-8 minutes, or until browned and fully cooked. Remove the sausage and set aside.
  5. In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until fragrant and translucent. Stir in the fresh sage and cook for another minute.
  6. Pour in the chicken broth and heavy cream. Bring to a gentle simmer and let the sauce thicken for about 5 minutes.
  7. Stir in the roasted squash, cooked sausage, and drained pasta. Toss everything together until well-coated. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.
  8. Finish with freshly grated Parmesan cheese and adjust the seasoning with salt and pepper. Serve warm and enjoy!

For best results, roast the squash evenly to caramelize its flavor. Reserve pasta water to adjust sauce consistency. Use fresh sage for optimal flavor.
