  • 2 boneless, skinless chicken breasts
  • 28-ounce can of crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 1 cup grated Parmesan cheese
  • 2 carrots, sliced thin
  • 2 celery stalks, sliced thin
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • Optional: Red pepper flakes
  • 1 cup shredded mozzarella cheese for topping

Instructions

  1. Slice the carrots and celery into thin rounds, dice the onion, and mince the garlic.
  2. Place the chicken breasts at the bottom of the slow cooker, followed by the crushed tomatoes, chicken broth, carrots, celery, onion, and garlic.
  3. Sprinkle the Italian seasoning, salt, and pepper over the top. Add red pepper flakes if desired.
  4. Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours until the chicken is tender and easy to shred.
  5. Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the slow cooker.
  6. Stir in the grated Parmesan cheese until melted and well-distributed.
  7. Ladle the soup into bowls and top with shredded mozzarella cheese. Garnish with fresh basil or parsley if desired.
