  • 1 bunch asparagus (about 1215 spears), trimmed and cut into 1-inch pieces
  • 4 ounces goat cheese, crumbled
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons olive oil
  • 1 clove garlic, minced (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons milk or cream (whole or 2%)

Instructions

  1. Preheat your oven broiler to high and position the rack about 6 inches from the heat source.
  2. Rinse and trim the tough ends of the asparagus, then cut into 1-inch pieces.
  3. Heat 2 tablespoons of olive oil in an oven-safe 10-inch skillet over medium heat. Add minced garlic and cook for about 30 seconds until fragrant.
  4. Add asparagus to the skillet and cook, stirring occasionally, for 4-5 minutes until tender-crisp and bright green. Season lightly with salt and pepper.
  5. In a mixing bowl, whisk 6 large eggs with 2 tablespoons of milk or cream. Add a pinch of salt and freshly ground black pepper. Whisk until lightly frothy.
  6. Pour the egg mixture evenly over the sautéed asparagus in the skillet. Cook undisturbed over medium-low heat for 3-4 minutes until edges start to set but center is still slightly runny.
  7. Sprinkle 4 ounces of crumbled goat cheese evenly over the top, followed by chopped chives and thyme leaves.
  8. Transfer the skillet to the oven under the broiler for 3-5 minutes until the top is puffed and golden brown. Watch closely to avoid burning.
  9. Remove from oven and let the frittata rest for 2-3 minutes before slicing and serving.
