A quick and easy creamy buffalo chicken dip with a spicy kick and tangy blue cheese crumbles, perfect for game day or casual gatherings.

Ingredients

Scale
  • 2 cups cooked shredded chicken (rotisserie chicken works great)
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 3/4 cup buffalo sauce (e.g., Frank’s RedHot)
  • 1/2 cup blue cheese crumbles (firm, small-curd preferred)
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Optional: chopped green onions or fresh parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine softened cream cheese and sour cream. Beat until smooth and creamy.
  3. Stir in garlic powder, onion powder, salt, and pepper until evenly mixed.
  4. Add buffalo sauce and mix until the dip is evenly colored.
  5. Fold in shredded cooked chicken until well coated.
  6. Stir in shredded cheddar cheese and half of the blue cheese crumbles.
  7. Spread the mixture evenly in an 8×8-inch baking dish.
  8. Bake for 20-25 minutes until edges are bubbly and top is lightly golden.
  9. Remove from oven and sprinkle remaining blue cheese crumbles on top. Garnish with green onions or parsley if desired.
  10. Let cool for 5 minutes before serving with celery sticks, tortilla chips, or crusty bread.

Notes

Use softened cream cheese to avoid lumps. Adjust buffalo sauce amount to control spice level. Cover loosely with foil for the first 15 minutes of baking if dip looks dry on top. Do not overbake to keep creamy texture. Leftovers keep well refrigerated for up to 3 days and can be reheated covered at 325°F for 15 minutes or microwaved in short bursts.
