  • 1/2 cup buffalo sauce (120ml)
  • 3/4 cup blue cheese crumbles (about 100g)
  • 1/2 cup sour cream (120ml)
  • 1 cup shredded mozzarella cheese (100g)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh chives or green onions, finely chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Shred the rotisserie chicken into bite-sized pieces, about 2 cups (280g).
  3. Place softened cream cheese in a mixing bowl and beat with an electric mixer or whisk until smooth and creamy.
  4. Stir in sour cream and buffalo sauce until fully incorporated and smooth.
  5. Add garlic powder, onion powder, salt, and pepper; taste and adjust seasoning as needed.
  6. Gently fold in shredded chicken, shredded mozzarella, and blue cheese crumbles until thick but spreadable. Add a tablespoon of milk or extra sour cream if too dry.
  7. Spread the mixture evenly into a greased 8×8-inch baking dish and smooth the top.
  8. Bake for 20–25 minutes until hot, bubbly, and lightly golden on top.
  9. Remove from oven, garnish with fresh chives or green onions, and serve immediately with tortilla chips, celery sticks, or toasted baguette slices.

Notes

Softening the cream cheese is essential to avoid lumps. Adjust buffalo sauce to control heat level. Use firm, small-curd blue cheese for best melting. Avoid overbaking to keep dip creamy. For a smoky touch, sprinkle smoked paprika before baking. Leftovers keep well refrigerated for up to 3 days and reheat covered at 350°F for 10-15 minutes or in short microwave bursts with added milk or sour cream to loosen.
