  • 1 can (15 oz / 425 g) cannellini or great northern beans, drained and rinsed
  • 68 garlic scapes, trimmed and roughly chopped (or 23 garlic cloves as substitute)
  • 2 tablespoons extra virgin olive oil
  • Juice of 1 medium lemon (about 2 tablespoons), freshly squeezed
  • ½ teaspoon sea salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • Optional: small handful fresh parsley or chives, finely chopped
  • 24 tablespoons water or reserved bean liquid to adjust consistency

Instructions

  1. Trim the tough ends off the garlic scapes and chop into roughly 1-inch pieces. (5 minutes)
  2. Heat 2 tablespoons olive oil in a skillet over medium-low heat. Add chopped garlic scapes and stir occasionally, cooking slowly until golden brown and caramelized, about 10-12 minutes.
  3. Drain and rinse canned white beans thoroughly under cold water. (2 minutes)
  4. Transfer caramelized garlic scapes and any oil left in the pan to a food processor. Add rinsed white beans, lemon juice, salt, and pepper. Pulse to combine, then blend continuously until very smooth, about 1-2 minutes.
  5. If dip is too thick, add water or reserved bean liquid one tablespoon at a time until creamy and spreadable. (5 minutes)
  6. Taste and adjust seasoning with more salt, pepper, or lemon juice if needed. (1-2 minutes)
  7. Optionally stir in chopped fresh parsley or chives. (1 minute)
  8. Transfer dip to a serving bowl. Serve immediately at room temperature or refrigerate for up to 1 hour to let flavors meld. If chilled, let sit at room temperature for 10 minutes before serving.

Notes

Cook garlic scapes slowly on medium-low heat to avoid burning and achieve a sweet caramelization. Drain and rinse beans well to remove canned flavor and starch. Adjust dip consistency gradually with water or bean liquid. Use fresh lemon juice for best flavor. Blend until ultra-smooth for a creamy texture. Serve with pita chips, crackers, or fresh veggies. Store leftovers refrigerated up to 4 days; stir in water or olive oil before serving again.
