Instructions

  1. Preheat your oven to 325°F (163°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. Make the crust: In a medium bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon. Stir until mixture resembles wet sand. Press firmly and evenly into the bottom of the prepared pan. Bake for 10 minutes until slightly golden and fragrant.
  3. Prepare the cheesecake filling: Beat softened cream cheese with sugar until smooth and creamy (2-3 minutes). Add eggs one at a time, mixing well after each. Stir in vanilla extract and sour cream until fully combined.
