  • ⅓ cup (65 g) granulated sugar
  • 1 teaspoon vanilla extract
  • Unsweetened cocoa powder, for dusting
  • Dark chocolate shavings (optional), for garnish

Instructions

  1. Brown the butter: In a small skillet over medium heat, melt the unsalted butter. Stir constantly as it foams and turns golden brown with a nutty aroma. Remove from heat and let cool slightly.
  2. Prepare the mascarpone cream: In a mixing bowl, combine mascarpone cheese, granulated sugar, and vanilla extract. Stir gently until smooth. In a separate bowl, whip the chilled heavy cream until soft peaks form. Fold the whipped cream into the mascarpone mixture, then slowly fold in the cooled brown butter until silky and slightly fluffy.
  3. Soak the ladyfingers: Pour cold brew coffee into a shallow dish. Quickly dip each ladyfinger into the cold brew for 1-2 seconds without soaking too long. Arrange a layer of soaked ladyfingers in the bottom of a 9×9-inch dish.
  4. Assemble the tiramisu: Spread half of the brown butter mascarpone cream evenly over the ladyfingers. Repeat with another layer of dipped ladyfingers and the remaining cream. Smooth the top with a spatula.
  5. Chill: Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, ideally overnight, to allow flavors to meld and texture to set.
  6. Finish: Just before serving, dust the top generously with unsweetened cocoa powder using a sifter. Add dark chocolate shavings if desired.
