  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon onion powder (optional)
  • Butter for greasing ramekins or muffin tin (unsalted preferred)
  • Optional add-ins: cooked bacon bits, chopped spinach, diced bell peppers, mushrooms

Instructions

  1. Preheat your oven to 325°F (163°C). Lightly grease your ramekins or muffin tin with butter to prevent sticking.
  2. In a blender or food processor, combine 6 large eggs, 1/2 cup cottage cheese, 1/4 cup heavy cream, salt, pepper, garlic powder, and onion powder. Blend until smooth but not frothy.
  3. Transfer the blended eggs to a bowl and gently fold in shredded cheddar and Gruyère cheese. Fold in any optional add-ins like bacon or spinach now.
  4. Pour the mixture evenly into prepared ramekins or muffin cups, filling about 3/4 full.
  5. Place ramekins in a baking pan and add hot water until it reaches halfway up the sides to create a water bath.
  6. Bake for 25-30 minutes, or until the egg bites are set but still slightly jiggly in the center. Cover loosely with foil if tops brown too quickly.
  7. Remove ramekins from water bath and let cool for 5-10 minutes before removing the egg bites.
