  • 2 large eggs, beaten
  • ½ cup yellow cornmeal
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the cream cheese until smooth using an electric mixer or whisk (about 2-3 minutes).
  3. Stir in sour cream and mayonnaise until fully combined and smooth.
  4. Beat in eggs, sugar, salt, and pepper until well blended and slightly thickened.
  5. Gently fold in corn kernels and 1 cup shredded cheddar cheese until evenly distributed.
  6. Add cornmeal and mix until just combined; mixture will be thick yet moist.
  7. Pour mixture into a greased 9×13 inch baking dish and smooth the top.
  8. Drizzle melted butter evenly over the surface, then sprinkle ½ cup shredded cheddar cheese on top.
  9. Bake for 45-50 minutes until casserole is set and top is golden brown and crispy (toothpick inserted should come out clean).
  10. Let the casserole rest for 10 minutes before serving.

If the top browns too quickly, tent loosely with foil. Let the casserole rest after baking for easier slicing. Use full-fat mayonnaise for best creaminess.
