A creamy, smoky, and easy slow cooker chicken recipe with bacon and cheese, perfect for busy weeknights and cozy dinners.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts
  • 6 slices bacon, cooked and crumbled
  • 8 ounces cream cheese, softened
  • 1 packet (about 1 ounce) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Optional: chopped green onions or fresh parsley for garnish

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, about 10-15 minutes. Drain on paper towels and crumble once cool. Save bacon fat if desired.
  2. Pat the chicken breasts dry with paper towels.
  3. In a mixing bowl, combine softened cream cheese, ranch seasoning, garlic powder, black pepper, and sour cream. Stir until smooth and well blended.
  4. Place chicken breasts in the crock pot. Spread the creamy mixture evenly over the chicken.
  5. Sprinkle shredded cheddar cheese and crumbled bacon over the top.
  6. Cover and cook on low for about 4 hours or until chicken reaches an internal temperature of 165°F and is tender enough to shred.
  7. Shred the chicken directly in the crock pot using two forks and mix gently with the sauce and bacon.
  8. Optional: garnish with chopped green onions or parsley before serving.

Notes

Patting chicken dry prevents watery sauce. Use softened cream cheese for smooth texture. Avoid lifting crock pot lid during cooking to maintain heat. Can cook on high for 2-3 hours but check often to prevent drying. Bacon fat can be added for extra flavor. For dairy-free, use cream cheese and sour cream alternatives and omit cheese or use vegan cheese.
