  • 810 corn or flour tortillas, cut into strips or small pieces
  • 1 can (10.5 oz / 298 ml) cream of chicken soup
  • 1 can (10.5 oz / 298 ml) cream of mushroom soup
  • 1 cup (240 ml) sour cream
  • 2 cups (about 225 g) shredded cheddar cheese
  • 1 cup (about 100 g) shredded Monterey Jack cheese (optional)
  • 1 small onion, finely chopped
  • 1 can (4 oz / 113 g) diced green chilies
  • 1 cup (150 g) frozen corn kernels, thawed
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Salt and black pepper, to taste
  • Optional garnishes: fresh cilantro, sliced jalapeños, lime

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine cream of chicken soup, cream of mushroom soup, and sour cream. Whisk until smooth.
  3. Stir in garlic powder, chili powder, salt, and pepper.
  4. Fold in shredded chicken, diced green chilies, thawed corn, and chopped onion. Mix gently to combine.
  5. Cut tortillas into strips or bite-sized pieces. Warm briefly if stiff.
  6. Lightly grease a 9×13-inch baking dish.
  7. Spread a thin layer of the creamy chicken mixture on the bottom of the dish.
  8. Add a layer of tortilla strips, then sprinkle a layer of shredded cheese.
  9. Repeat layering chicken mixture, tortillas, and cheese until all ingredients are used, finishing with a generous cheese layer on top.
  10. Cover loosely with foil and bake for 25 minutes.
  11. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  12. Let the casserole rest for about 10 minutes before serving.

Use freshly shredded cheese for better melting and texture. Avoid over-soaking tortillas to prevent mushiness. Let casserole rest after baking to firm up layers. Can be assembled ahead and refrigerated overnight. Reheat leftovers in oven or microwave. For dairy-free or gluten-free versions, use appropriate substitutions for soups, sour cream, and cheese.
