  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1/3 cup chopped sun-dried tomatoes (packed in oil, drained but keep some oil)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth (120 ml)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Pinch of red pepper flakes (optional)
  • A handful of fresh basil, chopped

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt and black pepper. Let rest at room temperature for 10 minutes if possible.
  2. Heat 2 tablespoons olive oil and 1 tablespoon butter in a large skillet over medium-high heat until shimmering and melted.
  3. Add chicken breasts to the pan and cook undisturbed for 5-6 minutes until golden brown. Flip and cook another 4-5 minutes until internal temperature reaches 165°F (74°C).
  4. Remove chicken from pan and tent loosely with foil to keep warm.
  5. Lower heat to medium and add remaining 1 tablespoon butter. Add minced garlic and chopped sun-dried tomatoes. Stir constantly for 1-2 minutes until fragrant but not browned.
  6. Pour in 1/2 cup chicken broth and 1 cup heavy cream. Stir well, scraping browned bits from the pan. Let simmer gently for 3-4 minutes to thicken slightly.
  7. Stir in grated Parmesan, Italian seasoning, and red pepper flakes if using. Melt cheese into sauce.
  8. Return chicken breasts to the pan, nestling them into the sauce. Simmer for 2-3 minutes to meld flavors and keep chicken juicy.
  9. Remove pan from heat and sprinkle chopped fresh basil over the top.
  10. Serve immediately, spooning sauce generously over the chicken.

Notes

If sauce is too thick, add a splash more chicken broth or cream. If too thin, simmer a few extra minutes to reduce. Avoid burning garlic by stirring constantly and keeping heat moderate. Let chicken rest after searing to keep it juicy. Fresh basil should be added at the end to preserve flavor.
