  • 2 boneless, skinless chicken breasts or thighs, cooked and shredded
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 4 garlic cloves, minced
  • 1 medium onion, finely chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh basil, chopped for garnish
  • Optional: Red pepper flakes for heat

Instructions

  1. Cook chicken in boiling water with a pinch of salt until fully cooked (about 15-20 minutes). Shred and set aside.
  2. Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic, stirring until fragrant and softened (about 3 minutes).
  3. Stir in Italian seasoning and red pepper flakes (if using) to bloom the spices.
  4. Pour in chicken broth and bring to a gentle boil. Lower the heat and simmer for 5 minutes.
  5. Add chopped sun-dried tomatoes and cook for another 5 minutes to infuse flavor.
  6. Lower the heat to medium-low and slowly whisk in the heavy cream. Let it simmer gently for 3-4 minutes.
  7. Stir in the shredded chicken and let it warm through (about 3 minutes).
  8. Gradually add grated parmesan cheese, stirring until melted and fully incorporated.
  9. Season with salt and pepper to taste.
  10. Ladle into bowls and top with fresh basil. Serve warm.
