  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 large garlic cloves, minced
  • 1 cup heavy cream (240 ml)
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon chopped fresh thyme
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon freshly squeezed lemon juice
  • Salt and black pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat 4 salmon fillets dry with paper towels and season both sides generously with salt and pepper. Let sit at room temperature for about 10 minutes.
  2. Heat a large non-stick or cast iron skillet over medium-high heat and add 2 tablespoons olive oil. Once shimmering, add salmon fillets skin-side down if applicable.
  3. Cook salmon for 4–5 minutes without moving to form a golden, crispy crust. Flip and cook for another 2–3 minutes until just opaque in the center. Transfer salmon to a warm plate and cover loosely with foil to rest.
  4. Reduce heat to medium-low and add 2 tablespoons butter to the same skillet. Once melted, add 4 minced garlic cloves and sauté for about 1 minute until fragrant but not browned.
  5. Pour in 1 cup heavy cream, stirring constantly. Bring to a gentle simmer, then stir in ¼ cup grated Parmesan cheese until melted and smooth.
  6. Stir in fresh herbs (parsley, chives, thyme), 1 tablespoon lemon juice, and a pinch of red pepper flakes if using. Adjust salt and pepper to taste. Sauce should be creamy and slightly thickened.
  7. Return salmon fillets to the pan, spoon sauce over each piece, and warm through for about 1 minute. Serve immediately with extra sauce ladled on top.

Notes

If sauce gets too thick, add a splash of water or broth to loosen it. Avoid overcooking salmon to keep it tender and flaky. Use fresh lemon juice for best flavor. For dairy-free version, substitute heavy cream with canned coconut milk and omit Parmesan or use dairy-free cheese.
