  • 1/2 cup (120 ml) sour cream
  • 1/4 cup (60 ml) mayonnaise
  • 1 cup (100 g) sharp cheddar cheese, shredded
  • 6 slices bacon, cooked and crumbled
  • 2 stalks green onions, finely chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp Worcestershire sauce
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Cook the bacon: Heat a skillet over medium heat and cook 6 thick-cut bacon slices until crispy, about 8-10 minutes, turning occasionally. Transfer to paper towels to drain and crumble once cool. (Optional: Save a bit of the bacon fat to drizzle over the dip for extra smoky flavor.)
  2. Soften the cream cheese: Allow the cream cheese to sit at room temperature for about 20 minutes before mixing.
  3. Combine the base ingredients: In a medium bowl, beat together the softened cream cheese, sour cream, and mayonnaise until creamy and smooth (2-3 minutes with a hand mixer or longer by hand).
  4. Add seasoning: Stir in garlic powder, onion powder, Worcestershire sauce, salt, and pepper. Mix well and taste to adjust seasoning.
  5. Mix in cheese and bacon: Fold in shredded cheddar and crumbled bacon, reserving a small handful of bacon for topping.
  6. Add fresh green onions: Stir in finely chopped green onions.
  7. Chill before serving: Cover and refrigerate the dip for at least 30 minutes to let flavors meld and texture firm up.
  8. Optional warm serving: Bake at 350°F (175°C) for about 15 minutes until bubbly if a warm dip is preferred.

Notes

Ensure cream cheese is softened to avoid lumps. Cook bacon to crispy but not burnt. Fold in cheese and bacon gently to maintain texture. Chill dip for at least 30 minutes for best flavor and texture. For a warm dip, bake at 350°F for 15 minutes. Store leftovers refrigerated up to 4 days; stir in milk or sour cream before serving again to loosen texture. Freezing not recommended due to texture changes.
