  • 4 oz (115 g) cream cheese, softened
  • 1 cup (150 g) Mini Eggs
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Line a baking sheet with parchment paper.
  2. Soften the cream cheese to room temperature.
  3. Melt the milk chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each, until fully melted and glossy. Alternatively, melt using a double boiler on low heat.
  4. In a separate bowl, whip the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
  5. Gently fold the melted chocolate into the cream cheese mixture until uniform and creamy, being careful not to overmix.
  6. Pour the creamy chocolate mixture onto the prepared baking sheet and spread evenly to about 1/4 inch (6 mm) thickness.
  7. Scatter the Mini Eggs evenly over the top, pressing them gently into the bark.
  8. Place the baking sheet in the refrigerator for at least 2 hours or until firm.
  9. Once set, remove from the fridge and break into rustic chunks. Store in an airtight container.

Notes

If the bark feels too soft after chilling, place it in the freezer for 10-15 minutes before serving for a satisfying snap. Temper chocolate carefully to avoid seizing. Softening cream cheese properly is crucial for smooth texture. Press Mini Eggs gently into the bark to prevent them from falling off.
