  • 1/2 cup chicken broth (120 ml)
  • 3 garlic cloves, minced
  • 1 teaspoon Italian seasoning (oregano, basil, thyme blend)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves, chopped (for garnish)

Instructions

  1. Pat 4 boneless, skinless chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and 1 teaspoon Italian seasoning. (5 minutes)
  2. In a mixing bowl, whisk together 1 cup heavy cream, 1/2 cup chicken broth, 1/2 cup freshly grated Parmesan, and 3 minced garlic cloves until well combined. (3 minutes)
  3. Place the seasoned chicken breasts evenly in the bottom of your slow cooker. Sprinkle 1/2 cup chopped sun-dried tomatoes over the chicken. Pour the creamy sauce mixture evenly on top. (2 minutes)
  4. Cover and cook on LOW for 4-5 hours, or until the chicken reaches an internal temperature of 165°F (74°C) and is tender. Avoid opening the lid frequently. (4-5 hours)
  5. Once cooked, stir gently to combine the sauce and tomatoes with the chicken juices. If the sauce is thinner than desired, turn slow cooker to HIGH and cook uncovered for an additional 10-15 minutes to thicken. (10-15 minutes)
  6. Sprinkle freshly chopped basil leaves before serving. Serve over rice, pasta, or alongside steamed vegetables. (2 minutes)

Notes

Do not open the slow cooker lid frequently to retain heat and moisture. Use freshly grated Parmesan for better sauce texture. If sauce is too thin, finish cooking uncovered on HIGH for 10-15 minutes. For dairy-free, substitute heavy cream with full-fat coconut milk. Chicken thighs can be used but reduce cooking time to 3.5-4 hours on LOW. Leftovers keep well refrigerated for 3 days or frozen for up to 2 months.
