A fresh twist on classic tiramisu featuring creamy mascarpone layers and a light strawberry syrup soak, perfect for spring and summer gatherings.

  • 8 oz (225 g) mascarpone cheese, softened
  • 1 cup (240 ml) heavy whipping cream, cold
  • 1/2 cup (60 g) powdered sugar, sifted
  • 1 tsp pure vanilla extract
  • 1 cup (150 g) fresh strawberries, hulled and sliced
  • 1/4 cup (50 g) granulated sugar
  • 1/2 cup (120 ml) water
  • 1 tbsp lemon juice, freshly squeezed
  • 24 ladyfingers (savoiardi)
  • Fresh strawberries for garnish (optional)
  • Powdered cocoa or grated white chocolate for dusting (optional)

Instructions

  1. Make the Strawberry Soak: In a small saucepan, combine sliced strawberries, granulated sugar, water, and lemon juice. Bring to a gentle simmer over medium heat, stirring occasionally, until the sugar dissolves and the strawberries soften (about 5–7 minutes). Remove from heat and let cool slightly. Strain the mixture through a fine sieve to catch the syrup, reserving the syrup and discarding or saving the softened strawberries for garnish.
  2. Prepare the Cream Layer: In a large bowl, whip the cold heavy cream with an electric mixer until soft peaks form. In a separate bowl, beat the mascarpone cheese with powdered sugar and vanilla extract until smooth. Gently fold the whipped cream into the mascarpone mixture using a spatula, careful not to deflate the fluffiness.
  3. Assemble the Tiramisu: Quickly dip each ladyfinger into the cooled strawberry syrup for 1-2 seconds. Arrange a layer of soaked ladyfingers in the bottom of your serving dish.
  4. Add Cream Layer: Spread half of the creamy mascarpone mixture evenly over the ladyfingers. Scatter reserved softened strawberries on top if desired.
  5. Repeat Layers: Add another layer of dipped ladyfingers and finish with the remaining cream mixture, smoothing the top.
  6. Chill: Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  7. Garnish & Serve: Just before serving, dust the top lightly with cocoa powder or sprinkle with grated white chocolate and fresh strawberry slices.

Notes

Whip cream to soft peaks to avoid grainy or buttery texture. Dip ladyfingers quickly to prevent sogginess. Chill overnight for best flavor and texture. For a lighter version, substitute heavy cream with Greek yogurt or coconut cream. Gluten-free and vegan adaptations are possible with ingredient swaps.
