  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup (120ml) milk, room temperature
  • 1/2 cup (120ml) brewed espresso or strong coffee, cooled
  • 2 tbsp coffee liqueur (optional)
  • 1 cup (240ml) heavy cream, chilled
  • 8 oz (225g) mascarpone cheese, softened
  • 1/2 cup (60g) powdered sugar
  • 1 tsp vanilla extract
  • Unsweetened cocoa powder
  • Chocolate shavings (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, beat the softened butter and sugar until light and fluffy, about 2-3 minutes.
  4. Mix in the eggs one at a time, followed by the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
  6. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Let the cupcakes cool completely.
  8. Combine the brewed espresso and coffee liqueur. Use a pastry brush to lightly soak the tops of the cooled cupcakes.
  9. Whip the heavy cream until stiff peaks form. In a separate bowl, mix the mascarpone cheese, powdered sugar, and vanilla until smooth. Gently fold the whipped cream into the mascarpone mixture.
  10. Pipe or spread the frosting onto the cooled, soaked cupcakes.
  11. Dust the tops with cocoa powder and add chocolate shavings, if desired.
