  • 2 (14-ounce) cans of whole peeled tomatoes
  • 2 cups vegetable stock
  • 1/2 cup heavy cream

  • Salt and pepper to taste
  • 1/2 teaspoon dried basil
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup shredded cheese
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon dried thyme
  • 1/3 cup milk
  • 1 egg, lightly beaten

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and cook for 4-5 minutes until softened.
  2. Add the minced garlic and cook for another minute, stirring continuously to avoid burning.
  3. Pour in the canned tomatoes (including the juice) and break them up with a wooden spoon. Add the vegetable stock, sugar, dried basil, and a pinch of salt and pepper.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes to allow the flavors to meld.
  5. While the soup is simmering, prepare the dumplings. In a mixing bowl, whisk together the flour, baking powder, salt, shredded cheese, parsley, and thyme.
  6. In a separate small bowl, combine the milk and beaten egg. Pour this mixture into the dry ingredients and gently fold until just combined. Be careful not to overmix!
  7. Once the soup has finished simmering, use an immersion blender to puree it until smooth. Stir in the heavy cream and adjust seasoning as needed.
  8. Bring the soup back to a gentle simmer, and use a spoon to drop small dollops of the dumpling dough into the soup. Cover the pot and let the dumplings cook for 10-12 minutes, or until they’re cooked through and fluffy.
  9. Serve hot, garnished with a sprinkle of fresh parsley or grated cheese if desired.
