  • 2 boneless, skinless chicken breasts, pounded to even thickness
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Italian seasoned breadcrumbs (Panko preferred)
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried Italian herbs
  • 23 tablespoons marinara sauce
  • 1 cup shredded mozzarella cheese
  • Olive oil spray
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts between two sheets of plastic wrap and pound to about 1/2 inch thickness.
  2. Season both sides of the chicken breasts lightly with salt and pepper.
  3. Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, Parmesan, garlic powder, and Italian herbs.
  4. Dredge each chicken breast in flour, shaking off excess, then dip into eggs, and press firmly into breadcrumb mixture to coat thoroughly.
  5. Preheat air fryer to 400°F (200°C) for 3 minutes.
  6. Lightly spray both sides of the breaded chicken with olive oil spray.
  7. Place chicken breasts in air fryer basket in a single layer without overlapping.
  8. Cook at 400°F (200°C) for 10-12 minutes, flipping halfway through, until chicken reaches 165°F (74°C) internally and coating is golden and crisp.
  9. Spoon 2-3 tablespoons marinara sauce on each cooked breast and top generously with shredded mozzarella cheese.
  10. Return chicken to air fryer and cook at 370°F (188°C) for 3-5 minutes until cheese is melted, bubbly, and lightly browned.
  11. Let chicken rest for a couple of minutes before serving.

Notes

For gluten-free, substitute all-purpose flour and breadcrumbs with almond flour and gluten-free Panko. For dairy-free, use vegan mozzarella and omit Parmesan. Fresh basil can be added before the final melt step for extra flavor. If chicken isn’t crispy enough, add extra olive oil spray or increase cooking time slightly. Leftovers reheat well in air fryer at 350°F for 5-7 minutes.
