These crispy bacon-wrapped jalapeño poppers feature a creamy cheese filling with sharp cheddar and cream cheese, baked to golden perfection for a spicy, creamy, and crunchy snack.

  • 12 medium fresh jalapeños
  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 12 slices thin-cut bacon
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder (optional)
  • Pinch of salt
  • Freshly ground black pepper, to taste
  • 1 tablespoon finely chopped fresh cilantro or chives (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wearing gloves, slice each jalapeño in half lengthwise and scoop out seeds and membranes. Pat dry with paper towels.
  3. In a mixing bowl, combine softened cream cheese, shredded sharp cheddar, garlic powder, onion powder, salt, pepper, and chopped herbs if using. Mix until smooth and well blended.
  4. Stuff each jalapeño half generously with the cheese mixture, pressing lightly to fill all cavities without overfilling.
  5. Wrap each filled jalapeño half with a slice of bacon, cutting bacon in half if needed. Wrap snugly but not too tight.
  6. Place the poppers on a wire rack over a baking sheet or directly on a parchment-lined baking sheet.
  7. Bake for 20-25 minutes, checking after 15 minutes to avoid burning. Bacon should be crispy and cheese bubbling.
  8. Remove from oven and let cool for 5 minutes before serving.
  9. Serve warm.

Notes

Wear gloves when handling jalapeños to avoid irritation. Pat jalapeños dry to prevent bacon from slipping. Use thin-cut bacon for even crisping. Rotate pan halfway through baking for even cooking. Let poppers rest 5 minutes before serving to allow cheese to set. For reheating, bake at 375°F for 8-10 minutes to restore crispiness; avoid microwaving.
