A quick and easy recipe featuring juicy chicken breasts wrapped around spicy jalapenos stuffed with creamy cheese and crispy bacon, perfect for appetizers or a flavorful dinner.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 700 g)
  • 4 medium jalapenos, halved and seeded
  • 8 oz (225 g) cream cheese, softened
  • 8 slices thick-cut bacon
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt to taste (about ½ tsp)
  • Black pepper to taste (about ¼ tsp)
  • 1 tbsp olive oil (optional, for searing)
  • Fresh cilantro or parsley, chopped (optional, for garnish)

Instructions

  1. Cut each jalapeno in half lengthwise and carefully scoop out the seeds and membranes using a small spoon. Set aside.
  2. In a bowl, combine softened cream cheese with garlic powder, paprika, salt, and pepper. Mix well until smooth and evenly seasoned.
  3. Spoon the cream cheese mixture into each jalapeno half generously but without overfilling.
  4. Cut each chicken breast horizontally into thin, even slices about ½ inch thick.
  5. Place one stuffed jalapeno half on a chicken slice, then carefully roll the chicken around it, fully enclosing the jalapeno.
  6. Wrap each chicken roll with a slice of bacon and secure with a toothpick if needed.
  7. Preheat oven to 400°F (200°C).
  8. Heat olive oil in a skillet over medium-high heat. Place bacon-wrapped chicken seam-side down and cook for about 2 minutes until bacon starts to brown. Turn to sear all sides evenly, about 6-8 minutes total.
  9. Transfer seared chicken rolls to a baking sheet and bake for 15-20 minutes, or until bacon is crispy and chicken reaches an internal temperature of 165°F (74°C).
  10. Let the chicken rest for 5 minutes before serving. Garnish with fresh chopped cilantro or parsley if desired.

Notes

Use thick-cut bacon for best crispiness and to hold the rolls together. Remove jalapeno seeds to reduce heat or keep some seeds for more spice. Searing before baking locks in juices and enhances flavor. Avoid overfilling jalapenos to prevent leaks. Reheat leftovers in oven or air fryer to keep bacon crispy.
